I cannot wait to try all of the recipes. I am a newly diagnosed diabetic and this page makes it less scary! I make a pound cake in a Bundt pan and always oil my pan, then I guess Splenda will be my new sugar. Sprinkle it on the bottom of pan.

Instead of greasing a pan and then coating it with flour, I like to grease the pan and then use sugar.

When I bake a cake, I tap my pans on the counter to release air bubbles. My layers always cook even and smooth when I do this.

My favorite cake is an angel food cake and pretty much has been sine I was a kid, I'm 67 now. I also love spice cake can you guys post more single serve cakes made with coconut flour or almond flower?

When baking always use the exact measurements. Get everything ready first and make sure your oven temperature is properly calibrated. Being a diabetic these all look so sinful. But at least you have given us options if we want something yummy to eat at a special occasion.
