Diner-Style Salisbury Steak

Typically, diner food isn't the best option for a diabetic diet, but with our recipe for lightened-up, Diner-Style Salisbury Steak you can enjoy an old-fashioned favorite without all the guilt! These ground beef patties are smothered in a delicious mushroom and gravy mixture you won't be able to resist!
What You'll Need
- 1 pound extra-lean ground beef
- 1/4 cup chopped onion
- 2 teaspoons chopped fresh parsley
- 1 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1 tablespoon margarine
- 8 ounces mushrooms, sliced
- 1/2 teaspoon dried thyme
- 1 (12-ounce) jar fat-free beef gravy
What to Do
- In a large bowl, combine beef, onion, parsley, garlic powder, and black pepper; mix well. Shape into 4 equal oval patties.
- Coat a large skillet with cooking spray over medium-heat. Add patties and cook 4 minutes per side, or until no longer pink inside. Remove from skillet to a plate.
- In the same skillet, melt margarine and saute mushrooms and thyme for 4 minutes. Add gravy and return patties to skillet. Cook for 5 minutes, or until heated through.

Just from looking at the picture of this Salisbury steak, you cant see any difference between it and a regular recipe. I love the taste of classic comfort foods from old diners and this one certainly fits that description. Looks so yummy. Would go great paired with cauliflower rice to pour the gravy over.

I like this easy recipe for an old-fashioned style comfort food. I can make this on a week night and serve it with egg noodles, rice, or mashed potatoes and a side vegetable. I will make it this summer since it's an easy stovetop meal that won't heat up the kitchen for long.

A more diabetic-friendly side dish would be cauliflower rice unless the sides you mentioned would be only for a non diabetic diner.
