This Italian Veggie Blend is sure to add variety to your plate. Good-for-you veggies flavored up with everyone's favorite...garlic...are simply delicious!
What You'll Need
- 2 cloves garlic, minced
- 1 cup chopped yellow or red bell pepper
- 3 cups peeled, cubed eggplant (1 medium, cut into 1-inch cubes)
- 2 zucchini.cut into 1-inch pieces
- 1/2 cup water
What to Do
- Coat a large nonstick skillet with cooking spray. Over medium heat, cook garlic and bell pepper until tender. Add eggplant, zucchini, and water.
- Bring to a boil, reduce heat to low, and simmer 10 to 15 minutes, or until vegetables are tender.
