The healthy benefits of balsamic vinaigrette make our Grilled Eggplant doubly good for you. This one goes with so many of your main dish favorites, you'll surely think of it often.
What You'll Need
- 1 (1-1/2-pound) eggplant
- 1/2 cup low-fat balsamic vinaigrette
What to Do
- Peel and slice eggplant into 3/8 inch slices. Sprinkle with 1 tablespoon salt and let drain into colander for 30 minutes. Rinse well and pat dry.
- Transfer eggplant to shallow baking dish and spoon dressing on top. Marinate 15 minutes and turn once. Drain.
- Grill eggplant on gas or charcoal grill, turning occasionally, until tender, about 10 to 15 minutes.
