Lemon-Dijon Chicken Skewers

Rain or shine, you'll enjoy these tangy Lemon-Dijon Chicken Skewers, 'cause they can also be cooked on an indoor grill or, if you prefer, under the broiler for about 2 minutes per side.
What You'll Need
- 1 1/2 pound boneless skinless chicken breast, cut into 24 strips
- 24 (10-inch) skewers
- 1/4 cup fresh lemon juice
- 2 tablespoons Dijon mustard
- 1 tablespoon canola oil
- 2 teaspoons chopped fresh dill
- 1 teaspoon grated lemon peel
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
What to Do
- Preheat the grill to medium heat. If using wooden skewers, soak them in water for 15 minutes.
- Thread each chicken strip onto a skewer.
- In a small bowl, combine the remaining ingredients; mix well. Dip chicken skewers into lemon-Dijon sauce, coating completely.
- Grill for 2 minutes per side, or until no pink remains. Serve immediately.
